Use flank steak or skirt steak
Pat the meat dry
Mix lime juice, orange juice, olive oil, minced garlic, chopped cilantro, cumin, chili powder, black pepper, and salt
Add optional ingredients like soy sauce, Worcestershire sauce, and jalapeño
Place the steak in a resealable bag or shallow dish
Pour the marinade over the meat
Turn to coat evenly
Refrigerate for 2 to 8 hours
Do not marinate longer than 12 hours
Remove the steak from the marinade
Discard the used marinade
Grill or sear the steak over high heat
Rest the meat before slicing
Slice against the grain
