How to Prepare an Eye Round Roast?

Preheat the oven to 450°F

Pat the eye round roast dry with paper towels

Trim excess fat if needed

Season generously with salt and pepper

Rub with garlic, herbs, or oil if desired

Place the roast on a rack in a roasting pan

Insert a meat thermometer into the thickest part

Roast for 15 minutes at 450°F

Reduce the oven temperature to 325°F

Continue roasting until the internal temperature reaches 125°F to 130°F for medium-rare

Remove the roast from the oven

Let it rest for 15 to 20 minutes

Slice thinly against the grain
