Place the steak on a wire rack set over a baking sheet
Let the steak come to room temperature for 20 to 30 minutes
Reheat the steak until the internal temperature reaches 110°F to 130°F
Check the steak every 5 to 10 minutes
Remove the steak from the oven
Sear the steak in a hot skillet with a little oil or butter for 30 to 60 seconds per side
Rest the steak for 5 minutes before serving
