Remove the tough stems from the kale leaves
Wash the leaves thoroughly and dry them well
Tear or chop the leaves into bite-size pieces
Place the kale in a bowl
Add a small pinch of salt
Add a little olive oil or lemon juice if desired
Use clean hands to squeeze and rub the leaves firmly
Continue massaging for 1 to 3 minutes
Stop when the leaves turn darker, softer, and slightly wilted
Taste and adjust seasoning if needed
