Use eggs that are 7–10 days old
Start with eggs in boiling water, not cold water
Add salt or baking soda to the water
Lower eggs gently into the water
Boil for 10–12 minutes
Transfer eggs immediately to an ice bath
Chill eggs for at least 10 minutes
Crack the shell all over before peeling
Peel under running water or in a bowl of water
Start peeling from the wider end
Remove the shell in larger pieces
Use eggs that have been cooled completely before peeling
