Rinse bok choy thoroughly under cold water
Trim off the base and separate the stalks if needed
Cut away any damaged or wilted leaves
Slice the stems and leaves into desired sizes
Pat dry with a clean towel or let drain
Heat a pan or pot with oil, water, or broth
Add garlic, ginger, or seasonings if desired
Cook the stems first for 2 to 3 minutes
Add the leaves and cook until wilted
Stir-fry, steam, boil, or sauté until tender
Season with salt, pepper, soy sauce, or sesame oil
Serve immediately
