Rinse the corned beef under cold water
Place it in a large pot or Dutch oven
Add enough water to cover the meat
Add the spice packet if included
Bring to a boil, then reduce to a low simmer
Cover and cook until tender
Cook for about 50 to 60 minutes per pound
Add vegetables during the last 30 to 45 minutes if desired
Check for doneness with a fork
Remove from the pot and let rest before slicing
Slice against the grain and serve
