How to Season Filet Mignon?

Pat the filet mignon dry with paper towels

Lightly coat all sides with oil

Season generously with kosher salt

Add freshly ground black pepper

Optional: add garlic powder

Optional: add onion powder

Optional: add a small amount of smoked paprika

Optional: add chopped fresh rosemary or thyme

Let the steak sit at room temperature for 20 to 30 minutes

Season again lightly just before cooking if needed
