Choose a cut of beef suitable for steak, such as ribeye, sirloin, strip, or tenderloin
Pat the meat dry with paper towels
Season both sides generously with salt and black pepper
Heat a heavy skillet or grill over high heat until very hot
Add a small amount of oil with a high smoke point
Place the steak in the hot pan or on the grill
Cook without moving it for a few minutes to form a crust
Flip the steak and cook the other side
Add butter, garlic, and herbs if desired during the last minute of cooking
Check the internal temperature for your preferred doneness
Remove the steak from heat
Let it rest for several minutes before slicing
Slice against the grain and serve
