How to Prepare Payasam?

Rinse 1/2 cup rice and soak for 15 to 20 minutes

Boil 4 cups milk in a heavy-bottomed pan

Add the soaked rice and cook on low heat, stirring often

Cook until the rice becomes soft and the milk reduces slightly

Add 1/2 cup sugar and mix well

Add 1/4 teaspoon cardamom powder

Add 2 tablespoons ghee-fried cashews and raisins

Add a few strands of saffron if desired

Simmer for a few more minutes until the payasam thickens

Turn off the heat and serve warm or chilled
