How to Make Payasam?

Rinse 1/2 cup rice and soak for 15 minutes

Heat 1 tablespoon ghee in a heavy pan

Add 10 to 12 cashews and 10 to 12 raisins; fry until golden

Remove and set aside

Add the soaked rice to the same pan and sauté for 1 to 2 minutes

Add 4 cups milk and bring to a boil

Lower the heat and cook until the rice becomes soft

Stir in 1/2 cup sugar or to taste

Add 1/4 teaspoon cardamom powder

Add a pinch of saffron if desired

Simmer until the payasam thickens to your liking

Add the fried cashews and raisins

Mix well and turn off the heat

Serve warm or chilled
