Rinse the rice briefly and drain well
Spread the rice evenly on a clean tray
Dry the rice completely in the sun or in a low oven
Heat a heavy pan, wok, or sand in a deep vessel until very hot
Add a small amount of rice at a time
Stir or toss quickly until the grains puff
Remove immediately once puffed
Sift out any unpuffed grains
Cool the puffed rice completely
Store in an airtight container
