Boil eggs until hard-cooked, then cool in ice water and peel
Season raw sausage meat with salt, pepper, and optional herbs or spices
Divide the sausage meat into equal portions
Flatten each portion and wrap it evenly around a peeled egg
Coat each wrapped egg in flour
Dip in beaten egg
Roll in breadcrumbs until fully covered
Heat oil in a deep pan or fryer to about 350°F
Fry the coated eggs until golden brown and the sausage is cooked through
Remove and drain on paper towels
Let cool slightly before serving
