Rinse sushi rice under cold water until the water runs mostly clear
Drain the rice well
Cook the rice according to package instructions or in a rice cooker
Mix rice vinegar, sugar, and salt until dissolved
Transfer the cooked rice to a wide bowl or hangiri
Gently fold the vinegar mixture into the hot rice
Fan the rice while mixing to help it cool and shine
Let the rice cool to room temperature before using
Cover the rice with a damp cloth until ready to serve
