Preheat the oven to 425°F
Line a baking sheet with parchment paper or foil
Wash and dry the cauliflower
Remove the leaves and core
Cut the cauliflower into evenly sized florets
Place the florets in a bowl
Add olive oil, salt, and pepper
Toss until evenly coated
Spread the florets in a single layer on the baking sheet
Roast for 20 to 25 minutes
Flip halfway through roasting
Roast until golden brown and tender
Serve immediately
