Preheat the Blackstone griddle on medium-high for 5–10 minutes
Scrape off any residue with a griddle scraper
Wipe the surface clean and dry with a clean cloth or paper towels
Apply a thin, even layer of cooking oil (use Blackstone Griddle Seasoning & Protectant, or high-smoke-point oil like canola/vegetable/avocado)
Spread the oil across the entire cooking surface and the sides
Heat until the oil starts to smoke, then reduce to medium heat
Let it burn in for 10–15 minutes
Turn off heat and allow to cool slightly
Wipe off excess oil (surface should look dry, not wet)
Repeat: apply thin oil layer, heat until smoking, then wipe off
Do 3–5 seasoning cycles for best results
After the final cycle, leave a very thin protective film
For first-time cooking, wipe off any excess oil before adding food
Maintain by wiping clean after cooking, then applying a thin oil layer and heating briefly before storing
