Pat the steak dry
Slice the steak into portions if needed
Sprinkle a small amount of baking soda evenly over the steak
Use about 1/4 teaspoon per 12 ounces of steak
Rub the baking soda lightly into the surface
Let the steak rest for 15 to 20 minutes
Do not leave it on for more than 30 minutes
Rinse the steak thoroughly under cold water
Pat the steak completely dry again
Cook the steak as desired
Alternatively, mix baking soda with a little water to make a paste
Coat the steak lightly with the paste
Rest briefly
Rinse well
Dry before cooking
