Open Settings
Tap Messages
Turn off Send Read Receipts
To turn it off for one conversation, open the chat in Messages
Tap the contact name or number at the top
Turn off Send Read Receipts
To turn it off for iMessage on all devices, repeat the setting on each device signed in to your Apple ID
