Pick tomatoes when they are mature green or just starting to blush
Place them in a single layer in a warm spot out of direct sunlight
Keep them at room temperature, ideally around 65 to 75°F
Store them with a ripe banana or apple to increase ethylene exposure
Check daily and remove any that show mold or rot
Turn tomatoes gently as they ripen for even color
Avoid refrigerating unripe tomatoes
Bring outdoor plants indoors before frost if fruits are still green
Remove some leaves to let sunlight reach the fruit
Reduce watering slightly near the end of the season
Pinch off new flowers so the plant focuses on ripening existing fruit
Harvest remaining green tomatoes before a hard freeze and ripen them indoors
