How to Make Corn Masa?

Select dried field corn or dent corn

Remove any debris and damaged kernels

Prepare a nixtamalization solution with water and food-grade calcium hydroxide

Boil the corn in the solution

Simmer until the outer skins loosen

Turn off the heat and let the corn soak

Drain the corn

Rinse the kernels thoroughly

Rub off the loosened hulls

Drain again

Grind the wet corn into a smooth dough

Add small amounts of water as needed while grinding

Knead until the dough is soft and cohesive

Cover and rest the masa before use
