How to Make Tomato Bisque?

2 tablespoons butter

1 tablespoon olive oil

1 medium onion, chopped

2 cloves garlic, minced

2 tablespoons all-purpose flour

2 tablespoons tomato paste

1 can crushed tomatoes

2 cups vegetable broth or chicken broth

1 teaspoon sugar

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon dried basil

1/2 teaspoon dried thyme

1/2 cup heavy cream

1 tablespoon fresh parsley, chopped

Melt butter and olive oil in a pot over medium heat

Add onion and cook until soft

Add garlic and cook briefly

Stir in flour and tomato paste

Add crushed tomatoes and broth

Add sugar, salt, pepper, basil, and thyme

Simmer for 20 minutes

Blend until smooth

Stir in heavy cream

Heat gently without boiling

Garnish with parsley before serving
