Pat the steak dry with paper towels
Let the steak sit at room temperature for 20–30 minutes
Season both sides generously with salt and pepper
Heat a heavy frying pan over medium-high heat until very hot
Add a small amount of oil with a high smoke point
Place the steak in the pan and press it down gently
Sear the first side for 3–5 minutes without moving it
Flip the steak and sear the other side for 3–5 minutes
Sear the fat edge and bone side if needed for 30–60 seconds
Reduce heat to medium if the pan starts smoking too much
Add butter, garlic, and herbs if desired
Spoon the melted butter over the steak while cooking
Cook until the internal temperature reaches your preferred doneness
Remove the steak from the pan and rest it for 5–10 minutes
Slice against the grain and serve
