Preheat oven to 400°F
Pat New York steak dry
Season both sides with salt and pepper
Heat an oven-safe skillet over high heat
Add a small amount of oil
Sear steak 2 to 3 minutes per side
Add butter, garlic, or herbs if desired
Transfer skillet to oven
Roast until desired doneness
Check internal temperature:
125°F for rare
130°F to 135°F for medium-rare
140°F to 145°F for medium
Remove steak from oven
Rest steak 5 to 10 minutes
Slice against the grain
Serve immediately
