How To Velvet Beef?

Slice beef thinly against the grain

Mix with 1 egg white

Add 1 tablespoon cornstarch per 1 pound beef

Add 1 tablespoon water or Shaoxing wine

Add 1 teaspoon oil

Add a pinch of salt

Mix until evenly coated

Marinate for 15 to 30 minutes

Heat water or oil until just below simmering or around 300°F

Blanch beef briefly for 30 to 60 seconds if using water

Stir-fry quickly if using oil

Remove as soon as the beef turns opaque

Drain well before cooking in the final dish
