Season the food
Heat oil or fat in a heavy pot
Sear the food on all sides
Remove the food from the pot
Add aromatics if desired
Deglaze the pot with a small amount of liquid
Return the food to the pot
Add enough braising liquid to come partway up the food
Bring the liquid to a simmer
Cover the pot tightly
Cook on low heat until tender
Turn the food occasionally if needed
Check for doneness
Remove the food from the pot
Reduce the braising liquid if desired
Serve with the sauce
