How To Cook Scallops?

Pat scallops completely dry with paper towels

Remove the side muscle if present

Season lightly with salt and pepper

Heat a skillet over medium-high to high heat

Add a small amount of oil with a high smoke point

Place scallops in the pan without crowding

Sear without moving for 1.5 to 2 minutes

Flip scallops once a golden crust forms

Cook the second side for 1 to 2 minutes

Remove when scallops are opaque and just firm

Add butter, garlic, or lemon at the end if desired

Serve immediately
