Wash the mango
Stand the mango upright on a cutting board
Slice off one side of the mango, avoiding the pit
Slice off the other side of the mango, avoiding the pit
Score the flesh of each mango half in a grid pattern without cutting through the skin
Turn each scored half inside out to expose the cubes
Cut the cubes away from the skin with a knife
Trim any remaining mango flesh from around the pit
Repeat with the remaining mango pieces
