Pat the steak dry
Season both sides with salt and pepper
Let the steak sit at room temperature briefly
Heat a skillet, grill, or pan until very hot
Add a small amount of oil if using a pan
Place the steak on the hot surface
Sear one side without moving it
Flip the steak
Cook to your preferred doneness
Add butter, garlic, or herbs if desired
Remove the steak from heat
Rest the steak for several minutes
Slice against the grain
Serve immediately
