Remove the membrane from the back of the ribs
Pat the ribs dry
Apply a dry rub evenly on both sides
Let the ribs rest at room temperature for 20 to 30 minutes
Preheat one side of the gas grill to low heat and leave the other side off for indirect cooking
Place a drip pan under the unlit side if desired
Put the ribs on the unlit side of the grill, bone side down
Close the lid and maintain a low temperature around 225°F to 275°F
Cook for 2 to 3 hours, turning occasionally
Add wood chips in a smoker box or foil packet if you want smoke flavor
Brush with barbecue sauce during the last 15 to 30 minutes if desired
Check for doneness when the meat pulls back from the bones and bends easily
Remove the ribs from the grill and let them rest for 10 to 15 minutes
Slice between the bones and serve
