Peel 2 to 4 potatoes
Grate the potatoes using a box grater or food processor
Place the grated potatoes in a bowl of cold water
Rinse until the water runs mostly clear
Drain well
Squeeze out as much moisture as possible using a clean kitchen towel or cheesecloth
Season with salt and pepper
Heat a skillet over medium-high heat
Add butter, oil, or both
Spread the potatoes into the skillet in an even layer
Press them down lightly with a spatula
Cook until the bottom is golden brown
Flip and cook the other side until golden brown and crisp
Remove from the skillet
Serve hot
