Gather fruit juice, sugar, and pectin
Sterilize jars and lids
Combine fruit juice, sugar, and pectin in a pot
Bring the mixture to a full boil
Boil for the time specified by the pectin package
Test for gel set if needed
Remove from heat
Skim off any foam
Pour the hot jelly into sterilized jars
Leave a small headspace at the top
Wipe jar rims clean
Seal with lids
Process in a boiling water bath if required
Let jars cool completely
Check that lids have sealed
Store in a cool, dark place
