Wash and prepare the fruit
Remove stems, pits, seeds, or peels as needed
Cut the fruit into small pieces
Measure the fruit and sugar
Combine fruit, sugar, and lemon juice in a pot
Let the mixture sit until the fruit releases juice
Heat the pot over medium heat
Stir until the sugar dissolves
Bring the mixture to a boil
Reduce heat slightly and cook, stirring often
Skim off any foam from the surface
Cook until the jam thickens and reaches setting point
Test the jam on a chilled plate
Remove from heat when ready
Pour the jam into sterilized jars
Seal the jars while hot
Let the jars cool completely
Store in the refrigerator or process for shelf storage if appropriate
