Wait until coriander plants are 4–6 inches tall before harvesting leaves
Use clean scissors or pinch off outer leaves first
Cut stems about 1–2 inches above the soil to encourage regrowth
Harvest in the morning for the best flavor
Take only one-third of the plant at a time to keep it healthy
For continuous leaf harvest, remove outer stems regularly
If harvesting seeds, let the plant flower and dry on the plant
Cut seed heads when they turn brown and dry
Place cut seed heads in a paper bag and shake to collect seeds
Store harvested leaves in the refrigerator and seeds in a dry container
