Wait until the sunflower head turns brown and the back of the head is yellow to brown
Check that the seeds are plump and the petals have dried and fallen off
Cut the flower head off with a few inches of stem attached
Place a paper bag or breathable cloth over the head to catch loose seeds
Hang the head in a dry, well-ventilated place for several days
Rub the seeds out of the head with your hand or a stiff brush
Remove any remaining plant debris and damaged seeds
Rinse the seeds if needed and pat them dry
Spread the seeds in a single layer to dry completely
Store the dried seeds in an airtight container in a cool, dry place
