How To Make Lobster Rolls?

Cook lobster tails or whole lobsters until just done

Cool the lobster slightly

Remove the meat from the shell

Chop the lobster meat into bite-sized pieces

Mix lobster with mayonnaise

Add lemon juice

Add salt and black pepper

Add chopped celery if desired

Add chopped chives or parsley if desired

Chill the lobster mixture briefly

Split top-split hot dog buns

Butter the outside of the buns

Toast the buns in a skillet or on a griddle until golden

Fill each bun with the lobster mixture

Serve immediately
