Preheat the oven to 425°F
Wash the delicata squash and dry it
Cut the squash in half lengthwise
Scoop out the seeds
Slice into half-moons or wedges
Toss with olive oil, salt, and pepper
Spread in a single layer on a baking sheet
Roast for 20 to 25 minutes
Flip halfway through
Roast until tender and lightly browned
Serve immediately
