Preheat the gas grill on high for 10 to 15 minutes
Clean and oil the grates
Pat the steak dry
Season the steak with salt and pepper
Reduce one side of the grill to medium or low for indirect heat
Place the steak on the hot side of the grill
Sear each side for 2 to 4 minutes
Move the steak to the cooler side if needed
Close the lid while cooking
Flip the steak once or twice during grilling
Use a meat thermometer to check doneness
Remove the steak when it is 5 degrees below the target temperature
Rest the steak for 5 to 10 minutes before slicing
Slice against the grain
