Grill or boil corn until tender and lightly charred
Cut corn kernels off the cob or keep cobs for serving
In a bowl, mix mayonnaise with crumbled cotija cheese (or queso fresco)
Stir in lime juice and chopped cilantro
Season with chili powder, smoked paprika, garlic powder, salt, and black pepper to taste
Brush or toss corn with the mayo-cheese mixture
Sprinkle with more cotija cheese
Finish with additional chili powder and extra cilantro
Serve immediately with lime wedges
