Add 1 to 2 inches of water to a pot
Place a steamer basket or insert in the pot
Bring the water to a boil
Put the eggs in the steamer basket in a single layer
Cover the pot with a lid
Steam large eggs for 12 to 14 minutes
Steam extra-large eggs for 14 to 15 minutes
Steam small eggs for 10 to 11 minutes
Transfer the eggs to an ice bath immediately
Let the eggs cool for 10 to 15 minutes
Peel the eggs when cooled
