Wash the oranges thoroughly
Peel the oranges, removing as much white pith as possible
Slice the peel into thin strips
Place the peel in a pot and cover with cold water
Bring to a boil, then drain
Repeat the boiling and draining process 2 to 3 times
Combine equal parts sugar and water in a saucepan
Bring the syrup to a simmer
Add the peel to the syrup
Simmer gently until the peel becomes translucent
Remove the peel from the syrup with a slotted spoon
Drain the peel on a wire rack or parchment paper
Toss the peel in granulated sugar if desired
Let the peel dry completely before storing
Store in an airtight container
