Remove the chorizo from its casing if needed
Heat a skillet over medium heat
Add the chorizo to the skillet
Cook and break it apart with a spoon until browned and cooked through
Drain excess fat if desired
Crack the eggs into a bowl and beat them lightly, or leave them whole if preferred
Lower the heat to medium-low
Add the eggs to the skillet with the chorizo
Stir gently for scrambled eggs, or let the eggs cook undisturbed for fried eggs
Cook until the eggs are set to your liking
Season lightly if needed
Serve immediately
