Preheat a skillet, grill, or grill pan over medium-high heat
Form ground beef into patties about 3/4 inch thick
Make a small indentation in the center of each patty
Season both sides with salt and pepper
Place patties on the hot cooking surface
Cook for 3 to 5 minutes on the first side
Flip the patties once
Cook for another 3 to 5 minutes for medium doneness
Cook longer if you want them more done
Add cheese during the last minute if desired
Toast burger buns if desired
Remove patties from heat and let rest for a few minutes
Assemble with buns and toppings of choice
