Wash and scrub the potatoes
Cut each potato in half lengthwise
Cut each half into wedge-shaped pieces
Soak the wedges in cold water for 20 to 30 minutes
Drain and pat the wedges dry
Toss the wedges with oil, salt, and desired seasonings
Preheat the oven to 425°F to 450°F
Arrange the wedges in a single layer on a baking tray
Bake for 25 to 35 minutes, turning halfway through
Remove when golden and crisp
Serve hot
