Preheat oven to 425°F (220°C)
Scrub potatoes under running water and pat dry
Poke 6–8 holes in each potato with a fork
Rub potatoes with olive oil (optional) and sprinkle with salt
Place potatoes directly on the oven rack or on a baking sheet
Bake 45–60 minutes for medium potatoes (about 5–7 oz / 140–200 g each)
Bake 60–75 minutes for large potatoes (about 8–12 oz / 225–340 g each)
Check doneness by inserting a fork into the thickest part; it should slide in easily
Rest potatoes 5 minutes before cutting
Slice lengthwise, fluff the inside with a fork, and add toppings as desired
