Pat the skirt steak dry
Season generously with salt and pepper
Heat a skillet, grill, or cast-iron pan over high heat
Add a small amount of oil if using a pan
Cook the steak 2 to 4 minutes per side for medium-rare
Do not overcook skirt steak
Check for an internal temperature of 130 to 135°F for medium-rare
Remove the steak from heat
Let it rest for 5 to 10 minutes
Slice thinly against the grain
Serve immediately
