Preheat the oven to 400°F
Wash the acorn squash
Cut the squash in half lengthwise
Scoop out the seeds and stringy pulp
Place the halves cut-side up on a baking sheet
Brush or drizzle with oil
Season with salt and pepper
Place cut-side down or cut-side up, depending on desired texture
Bake for 35 to 50 minutes until tender
Remove from the oven
Let cool slightly
Scoop out the flesh or serve in the skin
