Pat the beef stew meat dry
Season with salt and pepper
Optional: coat lightly with flour
Sear the beef in a hot skillet for 2 to 3 minutes per side
Add the beef to the slow cooker
Add chopped onions, carrots, potatoes, and celery
Add garlic, bay leaf, and herbs if desired
Pour in beef broth or stock
Add tomato paste or Worcestershire sauce if desired
Stir gently to combine
Cover and cook on low for 7 to 8 hours
Or cook on high for 4 to 5 hours
Check that the beef is tender before serving
Remove the bay leaf
Taste and adjust seasoning
Thicken the stew with cornstarch slurry if desired
Serve hot
