Rinse the black-eyed peas and pick out any debris
Soak them in water for 4 to 8 hours if desired, then drain
Place the peas in a pot and cover with fresh water or broth
Add salt, onion, garlic, bay leaf, or other seasonings if desired
Bring to a boil over medium-high heat
Reduce to a simmer and cook until tender, about 30 to 60 minutes for soaked peas or 45 to 90 minutes for unsoaked peas
Stir occasionally and add more liquid if needed
Taste for doneness and seasoning
Drain excess liquid if desired
Serve hot
