Take ground beef out of the fridge and form patties
Make patties slightly wider than the buns
Press a small dimple in the center of each patty
Season both sides with salt and pepper
Heat a skillet or cast-iron pan over medium-high heat
Add a small amount of oil if needed
Place patties in the hot pan
Cook without pressing down on them
Cook for 3 to 5 minutes on the first side
Flip the patties
Cook for another 3 to 5 minutes on the second side
Add cheese during the last minute if desired
Check for doneness with a thermometer if needed
Remove burgers from the pan
Let burgers rest for a few minutes
Toast buns in the pan if desired
Assemble with toppings and serve
