Preheat the oven to 425°F (220°C)
Line a baking sheet with foil or parchment paper
Soak wooden skewers in water for 30 minutes if using wooden skewers
Cut chicken into even 1 to 1.5 inch pieces
Season chicken with oil, salt, pepper, and desired spices or marinade
Thread chicken pieces onto skewers evenly
Place skewers on the prepared baking sheet or on a wire rack set over the sheet
Bake for 15 to 20 minutes, turning once halfway through
Check that the chicken reaches an internal temperature of 165°F (74°C)
Broil for 1 to 2 minutes if you want more browning
Remove from the oven and let rest for 3 to 5 minutes
Serve immediately
